A Light & Healthy Chef Salad

I DID it!  You all just might want to sit down for this one ;)   I FINALLY was craving something else for breakfast other than LAUGHING COW + JAM + SOUR DOUGH….Can you believe it???

Maybe I am finally breaking my streak and slowly moving out of my Breakfast Rut??

Egg Sandwich

I whipped up a quick EggWich on two slices of TJ’s Fat Free Multi-grain bread with a big Mug-O-Joe this morning.  The Husband wanted one too so I had a little incentive to mix things up a bit….told ya, it would be pretty impressive news ;) LOL

So, I had to give away my Little Yogurt Stars to my co-workers today when I realized I started thinking about how good they would taste with my coffee at 9 am. 

I allowed myself to have a few party stars with my banana and slowly, but, reluctantly gave the bag away. (3 pts for the “white” star I ate that you didn’t see).

Lunch was FANTASTIC in more ways than one. 

1st ~ it started off with an amazing PEDICURE!!! Have you all ever noticed when there are less people in the salon or waiting, you get more foot time.  That is EXACLTY how today was….ahhhhh!

I have been craving spicy, crunchy broccoli for like 2 weeks!  On my way back, I made sure to stop at Thai Kitchen and get my fix ~ to go!

There is something about eating out of little white Chinese food boxes that makes me happy :) !

There is something to be said about being a regular customer ~ I LOVE that they threw in an extra container of Spicy Chili Sauce. It’s the little things.

This TOTALLY HIT the spot!  1 c broccoli chicken = 2 pts and 1 c brown rice = 4 pts!  No I am not THAT hard core that I ate the jalapenos but I did think about it. ;)

I may or may not have had a little TJ’s Dark Chocolate Pretzel Bark for dessert that went un pictured.

Can I just tell you all that The Husband is AWESOME?!  He didn’t have to work today…so, not only did I come home to a completely cleaned house, he also started dinner!

One HUGE Chef Salad!

Easy Chef Salad

* Organic Mixed Greens from my Sister’s Garden ~ thanx sis – they are AWESOME!

* 1 hardboiled egg

* 1/4 c chick peas

* Cucumber Slices

* Sweet Mini Pepper Slices

* Organic Cherry Tomatoes

* 1.5 oz brown sugar ham and honey turkey

* 1 oz Pepper Jack Cheese

* 1/4 AVOCADO

* 1 mini slice of Veggie Focaccia

All topped with a drizzle of Ginger Sesame Dressing. (10 pts)

To thank him for being so awesome, I whipped up some BROWN SUGAR SUGAR COOKIES.  I saw this Furey and the Feast recipe over at Food 52 this past week and I was intrigued by it.

Brown Sugar Sugar Cookies

I LOVE the batter of these cookies and he loves the cookies.  They taste a lot like a chewy, caramel cookie and are definitely different from your traditional sugar cookie.

Amazing salad! I’ve gotten into the habit of hardboiling a bunch of eggs on Sundays so that I can use them as salad toppers/snacks throughout the week. Yum!

Nothing is better than a HUGE delicious salad!!! I love making cobb salads in the summer but I kind of forgot about Chef salads!! Need to get on this! :)

Whoo for an egg sammie instead of jam & LCL! (However I still need to try that because it looks FAB!)

That is a great looking salad- I always have trouble with salads filling me up, but this one would no doubt!!

I always try to get a manicure or pedicure during off hours, Saturdays are the worst. They have so much more time to chat and take their time when the salon isn’t buzzing. Love your salad, so colorful!

Tell the husband he did a VERY good job with boiling the eggs!! LOL Ok sooo your lunch looked amazing!! ANd sooo did the chef salad!! Woo hoo for the cookies….!!!
