BBQ Chicken Pita Pizza

1 Whole Wheat Pita or (tortilla if you want to save carbs)

1-2 Tbsp Gayle’s Sweet & Sassy Honey BBQ Sauce

1/4 c diced red onion

1 Tbsp chopped cilantro

3 oz grilled BBQ chicken

1/4 c or 1/2 oz  finely shredded low-fat mozzarella cheese

4 cherry tomatoes, thinly sliced

Prepare your chicken or use leftover cooked chicken breast.  Chopped up your veggies and shred your cheese.

Spread 1 Tbsp BBQ sauce on your whole wheat pita/tortilla.  Toss remaining bbq sauce with chicken.  Add chicken, onion, 1/2 the cilantro and 1/2 the tomatoes.  Top with all the cheese then remaining tomatoes and cilantro.

Place on grill and cook for 7-8 minutes or until the cheese is melted and your pita is crispy.

NOTE: If using a tortilla, you will want to place it on a pan then on the grill or cook it in the oven on 400 degrees for 5-7 minutes until the cheese is melted and the tortilla is crispy.

Makes 1 Pizza, 10 points+ for the ENTIRE thing!

The STAR of tonight’s dinner was this awesome Gayle’s Sweet & Sassy BBQ Sauce.  This is the same sauce that they use on California Pizza Kitchen Pizzas which are AMAZING!!!!

LOVE the ingredient list and I will ALWAYS pick a natural sauce over a “low-carb” one on BFL.  It is worth the few extra carbs to avoid the artificial sweeteners :) You can make up for the carb difference by using a La Tortilla Low-Carb tortilla instead of the pita :)

I didn’t have any chicken ready to go so I grilled up a few chicken breasts (enough for The Husband and tomorrow too!)

I measured out 3 oz and chopped it up for my pizza.

While the chicken cooked, I prepped all my pizza toppings.

This is why I LOVE FINELY shredded cheese over regular shreds.  It looks like you get so much more and it spreads further.

I used one Trader Joe’s Whole Wheat Pita (these are my favorite ones since they have toasty sesame seeds inside). 3 points+ for an entire pita!

Add your BBQ sauce

Then your pre-measured chicken

All your onions and 1/2 your Cilantro

1/2 your tomato slices

Then, finish it off with your cheese and remaining tomatoes & onions. Place your pita pizza directly on the grill and cook for 5-7 minutes.

The pita gets super crispy like a thin crust pizza and it is FULLY LOADED with healthy, clean toppings ~ MMMMMM!

You just can’t beat homemade pizza that looks THIS good.  Oh and it was THAT GOOD!!!

I threw a foil packet of green beans tossed with a little healthy EVOO, sea salt and pepper on the grill for a side.

All together this one a super filling dinner that was so easy to make.  The best part was I didn’t have to heat up the house at all.

I think I can officially say all my pizza cravings are gone now.  I will definitely make this again and plan on experimenting with different toppings and sauce.  I bet Canadian bacon and pineapple would work so good with this combination.

Try it ~ you will like it either way – with a pita or a whole wheat tortilla!

mmm it has been WAY too long since i had a BBQ chicken pizza, i think i may have to soon. yours looks great! i like to season turkey burger with fennel and it makes it taste like italian sausage and then put it on the pizza with bell peppers and marinara and mushrooms and olives and yum.
