Persimmons ~ The new salad topper…

I was up early to get in a 30 minute HIIT on the treadmill.  I LOVE morning workouts because they start your day off right and I get to catch the latest on the news.  This morning I wanted nothing sweet for breakfast, so I brought back an old favorite ~ An Egg White Fluffy!  I spiced up my Egg White fluffy with some Tapatio Hot Sauce, sea salt and pepper.  I served it on top of a Sweet Hawaiian Role and had a Tall FF Chai Tea Latte on the side. It was Eggsellant!

Mid morning I broke out a bag of the 100% Organic Banan-a-peel snacks that I got as part of the Goodie Swap I participated in.

They do not look so pretty in the bag, but, there was a quite a few in there.  They are 100% dried with nothing other than banana in there.

The verdict ~ I thought they were pretty nasty.  I was surprised because I LOVE bananas, but, these were just funky in a chewy texture and over ripe banana flavor.  I only had 2 banana slices before I broke out a Trader Joe’s Light String Cheese.

I got my brows waxed at lunch, ran by the house to pick up my special package that was waiting for me and came back ready for lunch.  I whipped up a FANTASTIC salad using up what we had in the fridge.

Organic Romaine

Organic Spinach

1/2 an Organic tomato, sliced

1/4 organic cucumber sliced

1 PERSIMMON sliced!

1 oz 98% Honey roasted turkey and ham

1 slice Lite Jarlsburg Swiss Cheese

1/4 organic AVOCADO!!!

Topped with Trader Joe’s Low-Fat Cranberry Walnut Gorgonzola Vinaigrette

I LOVED the crunchy sweet addition of the persimmon with the saltiness of the cheese, turkey and ham.

On the side, I had a some Trader Joe’s Roasted Red Pepper Hummus

with some Kashi Original 7-Grain Crackers.  Have you all seen these little mini pouches?

They are single servings ~ LOVE it!

The secret package I got in the mail was from Choban!!!  The fantastic peeps at Chobani sent me a sample of EVERY flavor of their amazing Greek Yogurt.   I cannot wait to dig in and let you all know my favorite. 

Oh and I will be sharing some Chobani LOVE with you all soon too! ;)

The rest of my day flew by which was AWESOME because I wasn’t sitting around dreaming about the fun I will be having at the Foodbuzz Blogger Festival this weekend!!! Ahhhh – I can’t believe it all starts tomorrow.  I am excited and nervous all in one.

I have to admit though, when I walked in the door it was definitely a night for a MocktailPOM Blackberry Iced Tea+Perrier+Ice makes all the craziness of the work day better!

As I sipped my Mocktail, I whipped up a fast and deliciously simple dinner ~

Mini Chicken Cilantro Pot Sticker Soup.  The Husband has been feeling sort sick lately so I made an adventurous version of Chicken Noodle soup :D Each serving is only TWO WEIGHT WATCHER POINT – YAHOO!

Topped with Srirachi Hot Sauce!  I LOVE that it took less than 30 minutes to make and I was able to use up some of the veggies we had in the house….Recipe and steps coming up next.

I also had a “chugging” contest with The Husband and downed some Emergen-C to keep his boy cooties away.  Fingers crossed they stay away!

I was still hungry after two bowls of soup and I am sure it is because of my lack of afternoon snack.  So, I toasted up two slices of Trader Joe’s Fat Free Multi-Grain bread with some Organic Artisan Butter ~ I LOVE bread and butter!

I just finished laundry so it’s time to pack!  We leave tomorrow for the festival fun ~ I cannot wait!!!

I am SO jealous about those Chobanis!!! I loves me some greek yogurt =)

And that soup looks delicious- dumplings are so good!!
