Happy Friday Eve all! Thanks for sharing your efforts to be more sustainable ~ I honestly LOVE reading about that type of stuff and how each of you are doing your part to make a difference.
So, I have TWO COOL THINGS to share with you all starting tomorrow:

2) I will be making up a HARVEST GRAIN BLEND MIX so you all can make the HARVEST GRAIN SALAD ~ No Trader Joe’s needed…..I hope to post it this weekend.
Breakfast this morning was a banana-wich with coconut coffee (6 points+)
I was really undecided about what I wanted my workout to be….I wasn’t feeling a strength training workout, circuit or the elliptical. So, I did the next best thing.
Jillian’s 30 Day Shred ~ Level 1 ~ It kicked my bootie in 20 minutes!
What I LOVE the most about this workout is her logic ~ you go through a series 3 minutes strength using multiple muscle groups, 2 minutes cardio, 1 minute abs.
Post workout snacks (1 points+)
I was still hungry so I decided to snack on a serving of Santa Fe Somersaults. (4 points+)
I actually made up my lunch and dragged it in to work today, but, I couldn’t do the Soup & Salad again. It didn’t really help that I have been thinking about The Pasta Shop all week long.
BIG SALADS with SIDE SALADS ALWAYS win in my book! I think was more of a Side Salad Salad LOL.
Sun Dried Tomato Tortellini Salad
TONS of roasted carrots and butternut squash.
Mini Frittata Squares ~ My protein since I wasn’t feeling the chicken or the eggs.
Roasted Beet, Bean & Walnut Salad ~ one day I will just get this salad only over my greens.
All on top of a bed of organic greens with carrots and a few mushrooms in the corner. I actually did pretty good at eating 90% of it ~ LOVE! (10 points+ estimate)
We are FINALLY having sunny weather in the 70’s-80’s~ I couldn’t resist snapping this picture on the train on my way home. It’s such a pretty & relaxing rid ~ I <3 the train!
I honestly did NOT want to cook at all tonight (tired!) But, The Husband convinced me that BLTA’s aren’t “really” cooking and they are super easy.
Even better ~ they are AMAZING every time I eat one!
* 2 slices Trader Joe’s Fat Free Multi-Grain Bread (3 points+)
* 1/4 avocado mashed topped with sea salt & black pepper (3 points+)
* 2 slices Uncured AppleWood Smoked Bacon (4 points+)
* 2 thick tomato slices & organic greens

I’ve been traveling for busines all week and just got home…so excited that I have a weeks worth of your posts to catch up on!!!
I have the 30 day shred but have’t done the workout in a while. I’m glad to know I’m not the only person who takes my lunch to work only to decide that I just don’t want it and then buy something else. That happens once or twice a month when I’m just sick of the boring lunch I brought.

Just wanted to share, our town is FINALLY getting a Trader Joes! the closest one is 40 min away……but June 17th is grand opening….I will be in Vegas celebrating my daughters 21st so I will grab my list of your reccomended/favs at Trader Joes and shop away!

I did the level 2 on Tuesday…still sore then decided to do level 1 yesterday!! I love that it is only 20 minutes!! Yay for us!! MUAH!
I loved the post workout snack ~fruit & cheese~ ,that is my fav snack all around . How long is your train ride ?

I have tried the Amy’s tamal that you had in one of your post, they are delish. I can not wait to make the harvest salad. BTW I have now become obsessed with sea salt chocolate covered caramels. I have only found one chocolatier that makes them in Buffalo… and he was kind to sell me two pieces (one for the husband
!)
