Broccoli, Turkey Sausage Crustless Quiche with a Kick Recipe
I LOVE Quiche, but, often do not LOVE the calories and fat in traditional quiches. This recipe takes away the crust and butter, but, replaces it with flavor and a little spicy HEAT. I used Jennie-O turkey Breakfast Sausage Patties, however, there are other versions that are lower in fat.
If I was to make this again, I would use my Homemade Turkey Sausage that is leaner and tastes even better.
Broccoli, Turkey Sausage Crustless Quiche with a Kick Recipe
8 ounces turkey breakfast sausage patties
1/2 onion, chopped
1 garlic clove, minced
1 1/2 cups egg beaters
2 cups fresh broccoli, chopped and steamed for 3 minuntes
1 1/2 cup skim milk
1 tbsp hot sauce, like Tapatio or Sriracha
Sea Salt & pepper to taste (about 1/4-1/2 tsp each)
1 jalapeno, sliced into rings
1 1/2 ounces 75% Light Cheddar, finely shredded
INSTRUCTIONS:
1. Preheat oven to 375.
2. Cook onion and breakfast sausage until cooked through and sausage is crumbled.
3. Layer on bottom of pie plate. Chop cooked broccoli and make that the next layer.
4. Whisk together the egg beaters, milk, and hot sauce. Top with Jalapeno slices.
5. Pour into pie pan or 8 inch baking square, sprinkle with shredded cheese. Bake for 30-35 minutes, or until eggs are set and top is slightly browned.
Makes 4 large slices or 6 small slices.

STEP-BY-STEP:
Brown your turkey sausage with your onion and garlic until cooked through. Add as the first layer to your 8-inch square baking dish.
Steam your broccoli for approximately 3 minutes and add as the next layer.
Mix your egg beaters, milk, sea salt, black pepper and hot sauce together.
Pour over your broccoli/sausage mixture.
Top with your finely shredded low fat cheese.
Plus as many seeded jalapeño slices as you can handle
Bake at 375 for 30-35 minutes or until golden….slice & enjoy as is or with your favorite hot sauce on top!

Party on Earth Day, Like it’s My Birthday….
I LOVE Earth Day ~ Not just because we get super cool stuff at work and get a fun catered Whole Foods Lunch, but, because, it’s one day a year that everyone has a chance to think about just ONE THING they can do to be GREENER.
If only we had Earth Month, imagine what we could do to our environment. I have LOVED hearing all the ways you all want to be GREENER this year….For me, it is to NOT USE a single paper or plastic bag but to ALWAYS carry a reusable bag or not buy what’s in my hands if I can’t carry it. I am also trying to used little to NO Ziploc bags.

The morning flew by with Earth Day Trivia questions and fun Gardening prizes to be won
I actually didn’t mean to miss my morning snack, but, before I knew it, it was time for WHOLE FOODS FRIDAY THURSDAY (in honor of Earth Day!)
Everything we used was from Seventh Generation & 100% compostable or recyclable – I LOVE that!
I started off with a Turkey Pinwheel ~ it was just ok…so I tossed it after a bite.
Plus a TON of the BEST Broccoli Salad ever ~ it had broccoli, red onions, cashews, sunflower seeds, raisins…..Basically it was worth my 8 pt estimate!
Sesame Noodle Salad ~ sounds and looks good, but, it wasn’t really…I tossed this too after 2 bites…life is just too short to waste your points on food that isn’t amazing.
1/2 a Turkey/Ham/Cheese Wrap that had Spicy Honey Dijon on Whole Wheat…..I LOVE wraps (6 pt estimate).
I had planned on only eating half of this cookie, but, it has EVERYTHING in it ~ oatmeal, raisins, craisins, white chocolate chips. dark chocolate chunks, coconut, WHOLE almonds….Um, ya, I ate it ALL (3 or probably more pts)
I was STUFFED all afternoon, but, at least I was stuffed with Whole Foods goodness
I knew I needed to lighten up dinner a bit and get in some GREENS.
I decided to clean out our fridge and tossed a bunch of veggies with some frozen potatoes for “O’Brien Hash Browns”.
I used 2 tsp Olive OIl at the start and added 2 tsp more while cooking to make it 1 tsp per serving!
I took the rest of the veggies and sautéed them for my Egg White Scramble….The secret ingredient ~ KALE!
Plus 1/2 cup liquid egg whites, sea salt & black pepper. (1 point per 1/2 cup!)
I turned off the heat and added a small pinch of shaved parmesan and tomatoes.
MMMM….but, do you know what was missing?
SRIRACHA!!! My entire egg mix was only…..1 POINT!
1/2 c of my potato mix cooked in 1 tsp olive oil (2 pts!)
TWO slices of TJ’s turkey bacon for 1 point
Can you believe this entire plate clocked in at ONLY FOUR POINTS (less than 300 calories)?!
Total contentment
~ The Kale in my eggs was AWESOME – it absorbed all the flavors and added a nice nuttiness.

Eggsellent Eats!
Happy Easter All! Today I made sure I used up some of our Easter Eggs by whipping up Deviled Eggs and a Healthier Potato Salad. You know your weekend is Eggsellent (you know I had to use that at least once!) when The Husband treats you to a FREE Starbuck’s TWICE in one weekend
I indulged a little this morning with a Grande FF Chai Tea Latte (4 pts).
I figured I’d use up some of hard boiled eggs and whipped up a quick snack of Deviled Eggs for The Husband and I. I like using half mayo and half greek yogurt in recipes that call for mayo. You get all the flavor with less fat and more protein.
4 Hard Boiled Eggs, halved
1 Tbsp Low Fat Mayo
1 Tbsp Fat Free Greek Yogurt
1 tsp dijon mustard
Sea salt & Black Pepper to Taste
Paprika Sprinkles
Simply half the eggs and remove the yolks. Combine the yolks with everything through the Black Pepper. Mix and “stuff” your egg shells. Sprinkle with paprika. 1 half = 1 pt.
After making our Easter Cupcake deliveries to The Husband’s family, I whipped up BLTA’s!
2 slices TJ’s FF Multi-Grain Bread
2 Tbsp TJ’s Avocado’s Number Guacamole!
4 slices Center Cut Bacon
BIG tomato slices
Mixed Greens
Plus 1/2 an orange (The Husband stole 1/2 of mine even though he said he didn’t want an orange)
My entire lunch came in at 6 points ~ AWESOME!
This afternoon I FINALLY mastered my Healthy Tiramisu Cupcakes!!! Homemade Espresso Soaked Vanilla Cake, creamy whipped middle INSIDE the cupcake and a deliciously light cream cheese frosting with dark chocolate shavings.
It really does look as good as it tastes (I ate the whole thing!)! I LOVE the “surprise”in the middle! RECIPE and STATS coming soon….believe it or not, they are EASY to make
I also finally played around with my Pot Sticker wrappers making some Butternut Squash Pot Stickers. More on these tomorrow with the recipe as I am having them for lunch.
We had The Husband’s Mom over for Easter dinner. I pulled out the Apple Wood Smoked Bacon Pork Loin I picked up at Sam’s Club. It’s so easy to make ~ simply wrap it in foil and bake for 20-30 minutes per pound.
4 oz = 4 points for a BACON pork Loin – YUM!
I made sure I got my 4 ounces too! It was really good – it’s sweet, smoky and full of BACON flavor. I LOVED the crunchy bacon top.
I used up more eggs and made my Healthier Potato Salad. 1/2 c = 2 pts.
Asparagus sprinkled with garlic salt, pepper and a little butter!
Speaking of BACON ~ In case you all missed it the first time around, Recipe Lion is featuring my Cheesy Bean & Bacon Stuffed Peppers today ~ they are delish!
Off to relax before the week starts…The weekends totally NEED to be longer.
