			<content:encoded><![CDATA[<p></p><p>Happy Friday eve all!!&#160; A few years ago I did a post about <strong><a href="http://danicasdaily.com/how-to-make-the-perfect-hard-boiled-egg">How to Make the Perfect Hard Boiled Egg</a></strong>.&#160; It’s ok, you can laugh at my awesome first year blogging photography in that post too ~ we all have to start somewhere, right?! LOL&#160; I even posted this <strong><a href="http://www.youtube.com/watch?v=PN2gYHJNT3Y">super cool video to show you how to peel hard boiled eggs without peeling the shell</a></strong>.&#160; It’s always fun to visit posts from the past especially when they crack me up like this one.</p>
<p>While I can say I’ve NEVER actually tried the trick in the video, that post made all the difference in how I feel about hard boiled eggs.&#160; As much as I LOVE Hard Boiled Eggs, I used to avoid making hard boiled eggs because I could NEVER peel them and I would get so frustrated I’d just end up throwing out all my practically peeled eggs and shells.&#160; What can I say, I am an instant gratification person in every way and I hate it when the egg shell steals practically all your egg white while you try to peel it. </p>
<p>I am revisiting this post because it is one of the questions I get asked all the time.&#160; How do you make your hard boiled eggs so perfect?&#160; Well my friends, here is my not so big anymore secret!</p>
<p>If you follow this exact procedure, you will turn out with perfect hard boiled eggs and no shell attached every single time!&#160; </p>
<p><strong><font size="4">HOW TO MAKE THE PERFECT HARD BOILED EGG!!!</font></strong></p>

<p><font size="3"><strong>INSTRUCTIONS:</strong> <a href="http://danicasdaily.com/recipage?recipe_id=6020119">(Print it!)</a></font></p>
<p>1. Cover the eggs with water ~ 2 inches to cover the eggs. Allow eggs to have a little room to move. </p>
<p>2. Sprinkle 1 teaspoon of baking soda&#160; over the eggs. (this is the trick I learned from the video &amp; it absolutely works!)</p>
<p>3. Bring the eggs to a gradual boil over medium high heat. </p>
<p>4. Once boiling, cover, removing from heat and set your timer for 15 minutes. </p>
<p>5. When the timer goes off, cool the eggs by running cold water over the eggs.</p>
<p>6.&#160; To peel the eggs, crack at the wide end on the soft spot (where there is usually a hole) then, tap the egg on the counter all around.&#160; Slowly peel from the soft spot all around the egg. </p>
<p>7.&#160; Run your egg under cool water as you peel it if you are having trouble with the shell sticking.</p>
<p><em>You all totally get bonus points if you can do it like he does in the video by holding the egg in your hand and blow vigorously into the narrow end of the egg, which will expel the egg out of it’s shell.</em></p>
<p><strong><font size="3">STEP – BY – STEP</font></strong></p>
<p>The “Secret” Ingredient ~ Baking Soda!</p>

<p>Place your eggs in a sauce pan, cover with cool water until all the eggs are covered, about 2-3 inches.&#160; </p>

<p>Sprinkle the eggs with 1 teaspoon of baking powder.</p>

<p>Then, bring to a gradual boil over medium high heat.&#160; Once the eggs are boiling, remove from heat, cover and let stand for 15 minutes.</p>

<p>Rinse in cold water and let stand for a few minutes to cool before peeling.</p>

<p>Start by tapping the wide end of the shell in the “soft spot” and then gently tap the shell on the counter.</p>

<p>I usually peel mine over the pan using the lid for the shells and the extra water in the pan as needed to help with peeling.</p>

<p>The homemade pesto adds a delicious garlicky basil flavor that compliments the sweet tomatoes, salty, crunchy bacon and sausage.&#160; I think Chorizo would be amazing if you wanted to kick it up a notch and make it spicy.</p>

<li>16 oz Fresh, Pre-Made Pizza Dough (I used Trader Joe&#8217;s Pizza Dough)</li>
<li>1/4 cup pesto, homemade or store bought (recipe below)</li>
<li>2 roma tomatoes, thinly sliced</li>
<li>5 eggs</li>
<li>2 Tbsp fat free mik</li>
<li>2 Tbsp parmesan cheese</li>
<li>1/2 cup chives, divided</li>
<li>3 slices center cut bacon, cooked</li>
<li>3 Jennie-O Lean Turkey Breakfast Sausages, cooked</li>
<li>2 oz low-fat sharp cheddar cheese, finely shredded</li>
</ul>
<p><strong>INSTRUCTIONS</strong></p>
<p>1.&#160; Preheat the oven to 450 degrees. While the oven preheats, prepare your pizza dough by rolling it out on a pan or stone and poking it all over with holes. Pre-bake the dough for 8 minutes.</p>
<p>2.&#160; Remove, top with pesto and tomato slices. Bake for 8 minutes.&#160; While the pizza bakes, whip up your scrambled eggs and prepare your pizza toppings.</p>
<p>3.&#160; Whisk together the eggs, parmesan, 1/2 the chives, milk, sea salt and pepper.&#160; Cook in a nonstick skillet sprayed with nonstick spray over medium low heat, until scrambled and fluffy, about 5 minutes.</p>
<p>4.&#160; Remove pizza from oven and add toppings starting with eggs and finishing with remaining chives.&#160; Bake for 2 minutes or until cheese is melted.</p>

<p>It is honestly so easy to make, I am pretty sure you will never want to buy store bought once you make it fresh!&#160; I LOVE using this pesto on pasta for a quick dinner, on pizzas for the “sauce”, in eggs and for my <strong><a href="http://danicasdaily.com/danicas-low-fat-healthy-pesto-sun-dried-tomato-cream-cheesepesto-spread">Sun Dried Tomato, Pesto Cream Cheese Spread.</a></strong></p>

<p><strong>INGREDIENTS</strong></p>

<li>1-2 cups fresh basil leaves (1 bunch)</li>
<li>1/4 cup chicken broth or 1 bouillon cube with 1/4 cup water</li>
<li>4-6 cloves garlic, peeled</li>
<li>1 Tbsp Olive Oil</li>
<li>1/2 cup fresh parmesan cheese</li>
</ul>
<p><strong>INSTRUCTIONS</strong></p>
<p>1) Blanch 1 – 2 cups of basil leaves. (To blanch – add to boiling water for 1-2 minutes and remove. Drain and run under cold water.) Set aside.</p>
<p>2) Add 1 chicken or vegetable bouillon cube to ¼ c hot water. Set aside.</p>
<p>3) Combine in the food processor (a blender will also work): blanched basil, 4-6 cloves of fresh garlic, olive oil. Add about 1-2 teaspoons of chicken broth – (Only use the amount of chicken broth needed to blend ingredients. You will not use the entire ¼ c.)</p>
<p>4) Blend the ingredients in the food processor until creamy and well blended.</p>
<p>5) Pour blended mixture into a bowl and stir in parmesan cheese to flavor and to absorb liquid.</p>
<p>6) Drain excess liquid.</p>

<p>When it comes to making delicious scrambles, cook your eggs slow and low.&#160; Cook in a nonstick pan sprayed with nonstick spray over medium low heat.</p>

<p>While the pizza and eggs cook, prepare the rest of your pizza toppings.</p>

			<content:encoded><![CDATA[<p></p><p>Happy Tuesday all!&#160; I am back with the first recipe in my <strong><a href="http://danicasdaily.com/an-eggsellant-brunch-my-weekly-menu">Eggland’s Best Brunch Recipe Series</a></strong>.&#160; I will be the first to admit I have ALWAYS wanted to try to make crepes, but, honestly, I thought they seemed “too hard”.&#160; Maybe it is all the vendors you see at Farmer’s Markets and on the Food Network using their fancy pans twirling the light and fluffy crepe batter around.&#160; Maybe it is just that I thought how do you make such a thin pancake and flip it without tearing.&#160; </p>
<p>We all know I have issues with that ~ hence, why my <strong><a href="http://danicasdaily.com/recipage?recipe_id=6003719">Chicken Enchiladas</a></strong> are a casserole instead of well pretty rolled up enchiladas.</p>
<p>The idea for this recipe came about when I started pondering what appetizers I could serve for my brunch.&#160; I totally thought of those delicious ham and cream cheese tortilla roll ups that are filled with chives, olives, cream cheese, ham.&#160; The only problem is I can literally eat a bunch of those thinly sliced tortillas and well that didn’t include my star ingredient ~ <strong><a href="http://www.egglandsbest.com/">Eggland’s Best Eggs</a></strong>!</p>
<p>Enter Crepes!&#160; Not just any Crepes ~ crispy and light crepes filled with all those delicious ingredients made healthy.&#160; Lean Brown Sugar Ham, cream cheese with chives, sweet and spicy cherry peppers and a whole lotta deliciousness.</p>
<p>You really can mix and match any ingredients to make your favorite Crepe Roll Up’s ~ get creative and dig!</p>

<p><strong>INGREDIENTS</strong></p>
<ul>
<li>8 Light and Healthy Crepes (recipe below) </li>
<li>1/2 cup reduced-fat cream cheese Or 8 Laughing Cow Cheese Wedges </li>
<li>2 Tbsp fat-free milk, optional</li>
<li>1/2 cup chives, diced </li>
<li>1/2 cup cherry peppers, stems removed, diced </li>
<li>sea salt and black pepper to taste </li>
<li>8 slices lean brown sugar ham from the deli </li>
<li>2 cups Organic Arugula </li>
</ul>
<p><strong>INSTRUCTIONS</strong></p>
<p>1.&#160; To make your cream cheese spreadable, use the milk to thin it by beating together cream cheese and milk in a small bowl until smooth.</p>
<p>2. Place 1 crepe on a flat surface.&#160; Spread 1 rounded tablespoon of cream cheese all over the crepe.&#160; Sprinkle with chives, cherry peppers sea salt and black pepper.&#160; Top with 1 slice of ham and a small 1/4 cup of arugula.&#160; Roll it tightly like a fancy burrito being careful to not tear it.</p>
<p>3.&#160; Repeat the remaining crepes. Cut each crepe equally into thirds, plate and serving.</p>

<p><strong>INGREDIENTS</strong></p>
<ul>
<li>1/2 cup all purpose flour </li>
<li>1/4 teaspoon salt </li>
<li>1 cup fat-free milk </li>
<li>2 eggs, lightly beaten </li>
</ul>
<p><strong>INSTRUCTIONS</strong></p>
<p>1.&#160; Mix together the dry ingredients, flour and salt, in a medium bowl.&#160; Set aside.</p>
<p>2.&#160; Whisk together milk and eggs in a small bowl. Whisk egg mixture into the flour mixture until smooth and let stand for 15 minutes. </p>
<p>3.&#160; Spray an 8-inch nonstick skillet with nonstick spray and set over medium heat until drop of water sizzles in pan. Pour a 1/4 cupful of batter into the skillet, tilting pan to coat bottom completely.</p>
<p>4.&#160; Cook until top is set and underside is golden brown, about 11/2 minutes. With Spatula, loosen edge of crepe and turn over. Cook until second side is slightly browned, about 25 seconds. Slide crepe onto plate.</p>
<p>5.&#160; Repeat with remaining batter, lightly spraying skillet before adding more batter.</p>

<p>Slowly whisk the wet ingredients into the dry mix whisking until thoroughly combined.</p>

<p>Allow the batter to set up by letting it rest for 15 minutes.</p>

<p>Heat a medium nonstick skillet over medium heat.&#160; Spray with nonstick spray.&#160; Add 1/4 cup of the crepe batter to the pan and swirl it around.</p>
<p>Cook for 1 1/2 minutes until the batter is set and the top is bubbly.</p>

<p>Flip and cook an additional 30 seconds.&#160; Then, remove to a plate. </p>

<p>Repeat until all your batter is gone, you should end up with about 8 crepes.</p>

<p>Spread with a heaping tablespoon of cream cheese (or laughing cow cheese!) and top with chives, sea salt &amp; pepper.</p>

			<content:encoded><![CDATA[<p></p><p>I am a big fan of CHEESY BREAKFAST casseroles, especially quiches.&#160; This recipe puts a healthy spin on a a classic Broccoli Quiche by using low fat cheeses, buttermilk (for a rich creamy buttery flavor) and whole wheat flour.&#160; I LOVE having the crust mixed IN the quiche because it makes it dense, creamy, cheesy and crunchy with the FRESH broccoli.</p>
<p>My inspiration for this recipe comes from my <a href="http://danicasdaily.com/the-things-that-make-you-go-yum/">Weight Watcher’s Slow Cook It cookbook</a>.&#160; I modified their Broccoli Frittata Bite recipe to make it into a crockpot broccoli and cheese quiche.</p>
<p>The key to making this recipe a success in the slow cooker is to remember <strong><font color="#ff0080" size="3">ONE RULE</font></strong> ~ when it comes to eggs, cook them slow and low.&#160; High heat tends to burn the outsides before the inside has a chance to cook.</p>
<p>Feel free to mix this up with any vegetable you love, just make sure you use fresh or if you use frozen, unthaw and pat dry to remove the water.</p>

<li>2 tsp olive oil </li>
<li>1 onion, chopped </li>
<li>10 oz FRESH broccoli, chopped </li>
<li>1 1/4 cups 1% buttermilk </li>
<li>3 eggs </li>
<li>1/2 cup whole wheat flour </li>
<li>1 tsp baking soda </li>
<li>Sea salt and black pepper to taste </li>
<li>2 tsp of your favorite Hot Sauce, optional </li>
<li>1 cup low-fat sharp cheddar cheese, finely shredded </li>
<li>Crockpot liners (recommended if your eggs tend to stick) or nonstick cooking spray </li>
</ul>
<p><strong>INSTRUCTIONS</strong></p>
<p>1.&#160; Spray a large 3-4 quart crock pot dish with nonstick spray or line with a crock pot liner and spray with nonstick spray.</p>
<p>2.&#160; Heat oil in a large skillet.&#160; Add onion and cook, stirring occasionally, until softened, about 3 minutes.&#160; Reduce heat and cook, stirring occasionally, until golden and very soft, about 15 minutes.&#160; Add broccoli and cooking, stirring occasionally, until all the flavors are blended, about 2-3 minutes.</p>

<p>Yesterday I couldn’t wait to get on the scale for weigh in.&#160; I have to say though, despite all the things I listed in having a good week and leaving 31 of my WPA on the table uneaten, the scale showed me up .8 lbs.&#160; I was pretty bummed but, then, I remembered all the<strong> <a href="http://danicasdaily.com/what-is-one-nsv-youve-had-this-week/">Non-Scale Victories</a></strong> we talked about this past week and realized, it’s one week (maybe <strong><a href="http://danicasdaily.com/index.php?s=%22blogherfood11%22">BlogHERFood</a></strong> was catching up with me) and the number on the scale does not determine my success.&#160; It’s all the little things I did right that made my week a success and in the end, that is all that really matters.</p>
<p>It’s a NEW WEEK and I am going to keep on keepin’ on because I know my efforts are going to show at the scale.</p>
<p>Breakfast involved these Sonoma Carb Cutting Tortillas I picked up at Trader Joe’s.</p>

<p>I have been wanting to make these <strong><a href="http://www.nbc.com/the-biggest-loser/exclusives/nutrition/healthy-eating/">Jennie-O Taco Muffin Cups</a></strong> ever since I saw them on the Biggest Loser last week.  In fact, I went out and bought everything to make them the next day LOL.  They are actually pretty easy to make.</p>
<p>Preheat your oven to 400.</p>
<p>Brown up a package of Jennie-O Lean Turkey Sausage.  Did you all know these are only 1 point+ each? I was surprised by that in a good way.</p>

<p>Spray your muffin pan with nonstick spray and add in your tortillas.  I used 3 corn tortillas cut into 8 wedges, with 2 wedges per muffin tin.</p>

<p>I think that the recipe calls for a bigger muffin tin than what I was using.  The recipe says to use 3 Tbsps Egg Whites, however, I only had room for 2 Tbsps per muffin cup.  I used egg beaters.</p>

<p>I have been wanting to make <strong><a href="http://shannonskitchencreations.com/">Shannon’s</a></strong> Slow Cooker Turkey Sausage Lasagna ever since I saw her post <a href="http://www.friendsforweightloss.com/featured-recipe-of-the-week-slow-cooker-turkey-sausage-lasagna/"><strong>the RECIPE on Friends for Weight Loss</strong></a><strong>. </strong> I think it was the fact that she used <strong>BACON and CHEESE </strong>that kept me thinking about it all week.</p>
<p>When I started to put the recipe together, I realized I didn’t have any jarred pasta sauce.  So, I improvised and made <strong><a href="http://whatscookinwithmary.blogspot.com/2010/09/cabernet-meat-sauce.html">Mary’s Turkey Merlot Sauce</a></strong>.</p>
<p>I pretty much followed her recipe except I used 96% lean ground beef, 1/2 lb lean turkey sausage and added some more spices (Italian seasoning, crushed red pepper flakes).  I actually FORGOT the bacon LOL.</p>

<p>I got really excited about making this recipe when I saw that Trader Joe’s carried a reduced fat Smoked Gouda. I would’ve totally used full fat, but, figured I could save on calories/fat where ever you won’t miss them.</p>

<p>The other thing that really appealed to me about the recipe was that you put it all in the food processor and bake it….EASY!</p>

<p>The only changes I made were to use fresh spinach vs frozen, add sautéed mushrooms, crushed red pepper flakes and I used nonstick spray instead of oil in the baking dish.&#160; Oh and I omitted the nutmeg.</p>

<p>The verdict ~ I honestly didn’t like it at all ~ it was awful.&#160; The gouda gives it a nice “ham” taste but texture is funky.&#160; Flop #1.&#160; I had pineapple on the side but somehow never took a picture of it LOL.</p>

<p>I pondered adding celery and red bell pepper, but, figured since it was my FIRST time making it, I’d keep it plain and simple</p>
<p><strong><font size="2">INGREDIENTS</font></strong></p>
<p>3 hard boiled eggs, peeled and chopped</p>
<p>2 Tbsp Reduced Calorie Mayonnaise</p>
<p>1 tsp regular mustard</p>
<p>Freshly ground Sea Salt and Black Pepper to taste</p>

<p><em>Mush together in a bowl with a fork.</em></p>

<p>Measure out your 1/3 cup egg whites, add sea salt, black pepper and HOT SAUCE.</p>

<p>Depending on the power of your microwave, cook for 1 – 1 /12 minutes until cooked through and there is nothing slimy on top.&#160; The microwave I used is 1,000 watts and I cook it for 1 minute, 15 seconds.</p>

<p>Can you believe my ENTIRE breakfast clocked in at only 3 points+ and kept me full for 4 hours?! Awesome!</p>

<p>This morning started with a quick trip to my local Weight Watcher’s Meeting, not for my weigh in, but, to pick up a Deluxe Kit for one of my friends.&#160; I have been checking ever since they sold out in November.&#160; I am so excited that they are FINALLY back in stock, but, they are going FAST so if you want one, go to your local Weight Watcher’s location before they sell out.</p>
<p>It is FREEZING here today (I know, not technically, it’s only in the 40’s, but, that’s cold for California).&#160; I wanted something WARM for breakfast.</p>

<p>I honestly could probably just take and hoard this entire basket of chips and salsa and call it good.&#160; But, I refrained, portioned out 12 chips on my napkin and broke them into pieces as I ate them so they lasted until our food game. (4 pp for the chips and the salsa is FREE)</p>
