			<content:encoded><![CDATA[<p></p><p>I am a big fan of CHEESY BREAKFAST casseroles, especially quiches.&#160; This recipe puts a healthy spin on a a classic Broccoli Quiche by using low fat cheeses, buttermilk (for a rich creamy buttery flavor) and whole wheat flour.&#160; I LOVE having the crust mixed IN the quiche because it makes it dense, creamy, cheesy and crunchy with the FRESH broccoli.</p>
<p>My inspiration for this recipe comes from my <a href="http://danicasdaily.com/the-things-that-make-you-go-yum/">Weight Watcher’s Slow Cook It cookbook</a>.&#160; I modified their Broccoli Frittata Bite recipe to make it into a crockpot broccoli and cheese quiche.</p>
<p>The key to making this recipe a success in the slow cooker is to remember <strong><font color="#ff0080" size="3">ONE RULE</font></strong> ~ when it comes to eggs, cook them slow and low.&#160; High heat tends to burn the outsides before the inside has a chance to cook.</p>
<p>Feel free to mix this up with any vegetable you love, just make sure you use fresh or if you use frozen, unthaw and pat dry to remove the water.</p>

<p><strong>INSTRUCTIONS</strong></p>
<ul>
<li>2 tsp olive oil </li>
<li>1 onion, chopped </li>
<li>10 oz FRESH broccoli, chopped </li>
<li>1 1/4 cups 1% buttermilk </li>
<li>3 eggs </li>
<li>1/2 cup whole wheat flour </li>
<li>1 tsp baking soda </li>
<li>Sea salt and black pepper to taste </li>
<li>2 tsp of your favorite Hot Sauce, optional </li>
<li>1 cup low-fat sharp cheddar cheese, finely shredded </li>
<li>Crockpot liners (recommended if your eggs tend to stick) or nonstick cooking spray </li>
</ul>
<p><strong>INSTRUCTIONS</strong></p>
<p>1.&#160; Spray a large 3-4 quart crock pot dish with nonstick spray or line with a crock pot liner and spray with nonstick spray.</p>
<p>2.&#160; Heat oil in a large skillet.&#160; Add onion and cook, stirring occasionally, until softened, about 3 minutes.&#160; Reduce heat and cook, stirring occasionally, until golden and very soft, about 15 minutes.&#160; Add broccoli and cooking, stirring occasionally, until all the flavors are blended, about 2-3 minutes.</p>
<p>3.&#160; Whisk buttermilk and eggs in a medium bowl.&#160; Whisk in flour, baking soda, sea salt, black pepper and hot sauce just until blended.&#160; Stir in broccoli mixture and 3/4 cup cheddar cheese until combined.</p>
<p>4.&#160; Transfer mixture to slow cooker; sprinkle remaining 1/4 cup cheddar cheese over the top.&#160; Cover and cook until a toothpick inserted into center comes out clean, 6-8 hours on low.&#160;&#160; Crock pots do vary on temperatures so be sure to adjust the time according to your crock pot settings.</p>
<blockquote><p>&#160;<strong>NOTE: </strong>Using the HIGH setting does not work with this recipe as it cooks unevenly (burned on the edges and soggy in the middle)</p>

<p>5.&#160; Transfer stoneware to rack and let quiche cool slightly, about 15 minutes.&#160; Slice a butter knife around the edges to loosen.&#160; Cut into 10 slices.&#160; Serve warm.</p>

<p>I am not sure that I buy into the whole adding things to your eggs, especially when your eggs are not organic.&#160; However, if you are going to add things, why not have them be good things for you like Vitamins and Omega-3’s <img src='http://danicasdaily.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> &#160; I do like that they treat their chickens humanely, they are vegetarian fed with no hormones added. </p>

<p>Start off by heating your olive oil over medium heat and adding your onions to caramelize.&#160; I LOVE caramelizing onions because it really brings out their sweetness.</p>

<p>Stir in 3/4 cup of your low-fat cheese.&#160; I used low fat Monterey jack because it is what I had on hand.</p>

<p>Pour your mixture into your prepared crockpot and top with your remaining quarter cup cheese.</p>

<p>You can get really creative with this recipe by mixing it up and using different vegetables or flavored cheeses each time.&#160; You can put this in the crock pot before bed&#160; and wake up to a delicious breakfast that took not time at all to prepare.&#160;&#160;&#160; Another option is to put it on a Sunday morning and enjoy it for dinner.</p>

<p>Yesterday I couldn’t wait to get on the scale for weigh in.&#160; I have to say though, despite all the things I listed in having a good week and leaving 31 of my WPA on the table uneaten, the scale showed me up .8 lbs.&#160; I was pretty bummed but, then, I remembered all the<strong> <a href="http://danicasdaily.com/what-is-one-nsv-youve-had-this-week/">Non-Scale Victories</a></strong> we talked about this past week and realized, it’s one week (maybe <strong><a href="http://danicasdaily.com/index.php?s=%22blogherfood11%22">BlogHERFood</a></strong> was catching up with me) and the number on the scale does not determine my success.&#160; It’s all the little things I did right that made my week a success and in the end, that is all that really matters.</p>
<p>It’s a NEW WEEK and I am going to keep on keepin’ on because I know my efforts are going to show at the scale.</p>
<p>Breakfast involved these Sonoma Carb Cutting Tortillas I picked up at Trader Joe’s.</p>

<p>I “fried” an egg in nonstick spray with sea salt and black pepper, cooked up a Morning Star Hot &amp; Spicy Veggie Sausage and then “fried” a tortilla in nonstick spray with 1 Tbsp REAL FULL FAT shredded pepperjack cheese.</p>

<p>I have been wanting to make these <strong><a href="http://www.nbc.com/the-biggest-loser/exclusives/nutrition/healthy-eating/">Jennie-O Taco Muffin Cups</a></strong> ever since I saw them on the Biggest Loser last week.  In fact, I went out and bought everything to make them the next day LOL.  They are actually pretty easy to make.</p>
<p>Preheat your oven to 400.</p>
<p>Brown up a package of Jennie-O Lean Turkey Sausage.  Did you all know these are only 1 point+ each? I was surprised by that in a good way.</p>

<p>Spray your muffin pan with nonstick spray and add in your tortillas.  I used 3 corn tortillas cut into 8 wedges, with 2 wedges per muffin tin.</p>

<p>I think that the recipe calls for a bigger muffin tin than what I was using.  The recipe says to use 3 Tbsps Egg Whites, however, I only had room for 2 Tbsps per muffin cup.  I used egg beaters.</p>

<p>I have been wanting to make <strong><a href="http://shannonskitchencreations.com/">Shannon’s</a></strong> Slow Cooker Turkey Sausage Lasagna ever since I saw her post <a href="http://www.friendsforweightloss.com/featured-recipe-of-the-week-slow-cooker-turkey-sausage-lasagna/"><strong>the RECIPE on Friends for Weight Loss</strong></a><strong>. </strong> I think it was the fact that she used <strong>BACON and CHEESE </strong>that kept me thinking about it all week.</p>
<p>When I started to put the recipe together, I realized I didn’t have any jarred pasta sauce.  So, I improvised and made <strong><a href="http://whatscookinwithmary.blogspot.com/2010/09/cabernet-meat-sauce.html">Mary’s Turkey Merlot Sauce</a></strong>.</p>
<p>I pretty much followed her recipe except I used 96% lean ground beef, 1/2 lb lean turkey sausage and added some more spices (Italian seasoning, crushed red pepper flakes).  I actually FORGOT the bacon LOL.</p>

<p>New Product FIND!!! I was super excited that Trader Joe’s now has FAT FREE Ricotta.  They usually only carry full fat ricotta so I bought this before I even knew what recipe I’d used it in.</p>

<p>I got really excited about making this recipe when I saw that Trader Joe’s carried a reduced fat Smoked Gouda. I would’ve totally used full fat, but, figured I could save on calories/fat where ever you won’t miss them.</p>

<p>The other thing that really appealed to me about the recipe was that you put it all in the food processor and bake it….EASY!</p>

<p>The only changes I made were to use fresh spinach vs frozen, add sautéed mushrooms, crushed red pepper flakes and I used nonstick spray instead of oil in the baking dish.&#160; Oh and I omitted the nutmeg.</p>

<p>The verdict ~ I honestly didn’t like it at all ~ it was awful.&#160; The gouda gives it a nice “ham” taste but texture is funky.&#160; Flop #1.&#160; I had pineapple on the side but somehow never took a picture of it LOL.</p>

<p>I was completely satisfied all day, but, I got really “snacky” in the afternoon ~ I honestly KNOW it had more to do with doing my taxes/boredom eating than it did with hunger.</p>

<p>Add your cooked pasta and cauliflower.&#160; I actually doubled the pasta in the recipe and used 1 cup of pasta because I wanted more noodles.</p>

<p>I pondered adding celery and red bell pepper, but, figured since it was my FIRST time making it, I’d keep it plain and simple</p>
<p><strong><font size="2">INGREDIENTS</font></strong></p>
<p>3 hard boiled eggs, peeled and chopped</p>
<p>2 Tbsp Reduced Calorie Mayonnaise</p>
<p>1 tsp regular mustard</p>
<p>Freshly ground Sea Salt and Black Pepper to taste</p>

<p>Measure out your 1/3 cup egg whites, add sea salt, black pepper and HOT SAUCE.</p>

<p>Depending on the power of your microwave, cook for 1 – 1 /12 minutes until cooked through and there is nothing slimy on top.&#160; The microwave I used is 1,000 watts and I cook it for 1 minute, 15 seconds.</p>

<p>Can you believe my ENTIRE breakfast clocked in at only 3 points+ and kept me full for 4 hours?! Awesome!</p>

<p>This morning started with a quick trip to my local Weight Watcher’s Meeting, not for my weigh in, but, to pick up a Deluxe Kit for one of my friends.&#160; I have been checking ever since they sold out in November.&#160; I am so excited that they are FINALLY back in stock, but, they are going FAST so if you want one, go to your local Weight Watcher’s location before they sell out.</p>
<p>It is FREEZING here today (I know, not technically, it’s only in the 40’s, but, that’s cold for California).&#160; I wanted something WARM for breakfast.</p>
<p>I started off with an Orowheat Double Fiber English Muffin topped with ICBINB spray (3 PP)</p>

<p>My favorite “regular” tortillas are these Organic Flour Tortillas from Trader Joe’s.</p>

<p>I REALLY wanted to make my <strong><a href="http://www.friendsforweightloss.com/recipe-of-the-week-crock-pot-steel-cut-oats-with-peaches-blueberries/">Crockpot Oats with Peaches and Blueberries</a></strong>, but, The Husband made an “eggy” request on Christmas Eve.</p>

<p>Not being one to turn down breakfast casseroles that include eggs, sausage, HASHBROWNS and CHEESE, I whipped up <strong><a href="http://www.weightwatchers.com/util/prt/recipe.aspx?Type=1&amp;RecipeID=67731">THIS Weight Watchers Texas Style Casserole</a></strong>.</p>

<p><strong>5 Points+ for 1/6th of the 9 x 13 pan</strong>.&#160; The changes I made was to cook my Jennie-O Turkey Sausage before I put it in the dish, added hot sauce and I used FRESH, not frozen peppers.</p>
<p>The result was pretty tasty but, having homemade Chipotle Salsa definitely helped <img style="border-bottom-style: none; border-right-style: none; border-top-style: none; border-left-style: none" class="wlEmoticon wlEmoticon-smile" alt="Smile" src="http://danicasdaily.com/wp-content/uploads/2010/12/wlEmoticon-smile18.png" />&#160; I had 1 square, The Husband had 4 LOL.</p>

<p>I decided for Christmas dinner that I would “renovate” her recipe and make it lighter/healthier to see if they noticed at all.&#160; </p>
<p>The changes I made to her recipe include:</p>
<p>* Using 96% lean ground beef, you could use turkey too</p>
<p>* Using low-fat mozzarella versus whole milk</p>
<p>* Using FAT FREE Cottage Cheese over ricotta (it melts and tastes just as good) ~ you could use ricotta – both work great</p>

<p>1 red onion, chopped&#160;&#160;&#160; </p>
<p>1 Tbsp extra virgin olive oil&#160;&#160;&#160; </p>
<p>1 1/4 lbs extra lean ground beef&#160;&#160;&#160; </p>
<p>3&#160; garlic cloves, minced&#160;&#160;&#160; </p>
<p>15 oz tomato sauce&#160;&#160;&#160; </p>
<p>15 oz diced tomatoes with Italian herbs&#160;&#160;&#160; </p>
<p>6 oz tomato paste&#160;&#160;&#160; </p>
<p>1/2 cup red wine&#160;&#160;&#160; </p>
<p>1 tsp Italian seasoning&#160;&#160;&#160; </p>
<p>1 tsp sea salt&#160;&#160;&#160; </p>
<p>1 tsp sugar&#160;&#160;&#160; </p>
<p>1/2 tsp black pepper</p>
<p>1/2 tsp crushed red pepper flakes&#160;&#160;&#160; </p>
<p>16 pieces no cook lasagna noodles&#160;&#160;&#160; </p>
<p>2 cups fat free Cottage Cheese&#160;&#160;&#160; </p>
<p>8 oz Part-Skim finely Shredded Mozzarella&#160;&#160;&#160; </p>
<p>1/2 cup grated Parmesan cheese&#160;&#160;&#160; </p>
<p><strong><font size="3">INSTRUCTIONS</font></strong></p>
<p>1.&#160; In a large frying pan, sauté onion in oil until soft, add beef and garlic, and cook, stirring until meat is brown and crumbly. </p>
<p>2.&#160; Stir in tomato sauce, tomato paste, wine, and 1/4 cup water. Add salt, Italian seasoning, pepper, sugar, stirring until mixed. Cover pan and simmer slowly about 1 1/2 hours.</p>
<p>3.&#160; Meanwhile prepare lasagna noodles in salted water as directed if you are not using the no cook noodles.</p>
<p>4.&#160; Spray a 9&#215;13 pan with nonstick spray. Arrange about 1/3 of the noodles in the bottom of the 9&#215;13 dish, criss-crossing noodles to make an almost solid layer. Spread 1/3 of the tomato sauce over the noodles, top with 1/3 of the cottage cheese and 1/3 of the mozzarella cheese. Repeat this layering two more times. Top with the parmesan.</p>
<p>5.&#160; Bake, uncovered, in a 375 degree oven for 35-40 minutes. Remove from oven and cut into rectangles to serve.</p>

<p>1/4 teaspoon freshly ground black pepper</p>
<p>1/2 teaspoon crushed red pepper flakes</p>
<p>8 ounces whole wheat elbow pasta, you want small noodles</p>
<p>1 cup Parmesan cheese, grated</p>
<p>1 1/2 cups low-fat sharp cheddar cheese, not mild</p>
<p>6 slices lean turkey bacon</p>
<p>1 cup cherry tomatoes, quartered </p>
<p>2 cups broccoli, chopped and blanched</p>
<p>1-2 tablespoon olive oil for drizzling </p>
<p><strong><font size="3">INSTRUCTIONS</font></strong></p>
<p>1.&#160; Preheat the oven to 375 degrees F. Spray 2 (12-cup) muffin or cupcake pans with vegetable cooking spray. Using 1/3-1/2 cup of the bread crumbs, coat the inside of each muffin cup with bread crumbs, shaking off any excess. </p>
<p>2.&#160; Spray a medium skillet with nonstick spray and place over medium high heat&#160; Add the ground turkey, onion and garlic 1/2 teaspoon salt, 1/4 teaspoon pepper and 1/2 teaspoon crushed red pepper flakes. Cook, stirring frequently, until cooked through, about 5 to 8 minutes. Set aside and cover to keep warm. </p>
<p>3.&#160; Meanwhile, bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, about 7 minutes. Drain and add to a large bowl. Stir in the cooked turkey mixture, the cheeses and the turkey bacon. Season with salt and pepper, to taste. </p>
<p>4.&#160; Spoon the prepared pasta mixture into the cupcake molds, filling evenly to about 2/3 full. Arrange a few pieces of broccoli and tomato into each cup. Top with a thin layer of the remaining bread crumbs and drizzle with olive oil. </p>
<p>5.&#160; Bake until golden brown, about 15 to 20 minutes. Let cool for a few minutes and carefully unmold with a spoon onto a serving platter. </p>
