Weight Watchers 5K Walk-It & My Weekly Menu

On our last day in Atlanta, we were up bright and early at 6:30 am to participate in the Weight Watchers 5K Walk-It Challenge!  I participated last year and I LOVED it so I was excited when I found a Weight Watchers sponsored 5K in Atlanta.

We stopped for coffee and water on our way out of the hotel.

I think it is awesome that there were so many people attending the event.

Several people made up their own Walk-It Shirts and it was so fun to read them all as we Walked-It!

We were all greeted with water and snacks once we crossed the finish line.

Probably the first and ONLY race I’ve ever been too where everything was labeled with points+

P.S. these Mango chunks are not good…the mango is good but the outside coating is funky.

I actually skipped all the snacks and grabbed a slice of orange since we had to check out of the hotel and get on a plane back home.

I had a blast in Atlanta and my favorite part was by far meeting everyone and then doing this walk with The Husband (even if we were both half asleep at the start).

Craziest thing I saw in Atlanta ~ boiled peanuts! If I knew of a way I could take them back home, I would’ve just to try them. 

Has anyone out there ever used these?  I am intrigued……

I enjoyed so many delicious foods these weekend, but, my body was craving fruits & vegetables.  I couldn’t wait to get back on track, restock our house and get in a good sweat session.

This morning I wasn’t hungry at all so I ended up just snacking on a few Quaker Oatmeal Squares with lots of coffee as I adjusted back to the time change (4 points+)

For lunch, I met TJ of TJ’s Test Kitchen for lunch today at Mary’s so we could swap stories of our experiences at BlogherFood and Fit Bloggin’. (I didn’t eat the salami or the onion and had 2 Tbsp ranch on the side). (8 points+)

After lunch, Tracey bought me a Coconut Dirty Latte (4 points+) that I may or may not have enjoyed with a little Scharffen Berger Mini Chocolate.

Tracey is totally rubbing off on me ~ look, I actually cut up a bunch of fruit today for the week or at least a couple of days.

Caribbean Papaya, Pineapple, Cantaloupe and I bought raspberries, blueberries and mangos to go with our oranges. (Told ya I missed fruit LOL).

Mid afternoon I snacked on a Weight Watcher’s 1 Points+ string cheese along with some of this fruit as I cut it up.

I have had this recipe from Eating Well for Skillet Gnocchi with Chard & Cannellini Beans sitting on our counter ever since it showed up in my inbox.

The entire recipe from start to finish takes 30 minutes and it’s pretty easy to make.

1/6rh of the dish is 9 points+.  We both LOVED it ~ I used the Shelf Ready Gnocchi from Trader Joe’s along with Fire Roasted Tomatoes with Garlic.

* Sopitas de Tortilla (I am FINALLY making this already!)

* Apple Maple Turkey Burgers, Sweet Potato Fries, Salad

* BBQ Chicken, Harvest Grain Salad, Green Salads

* Other ideas that sounded good: Clean Eating Collards with Shrimp & Sausage, French Dip Sandwiches, 9 points+ & Made with BEER, Shrimp Cobb Salad

    Welcome home and go you for doing the Walk-It!

    I love those Quaker Oatmeal Squares. I don’t buy them because I totally can’t stop eating them. =( A little jealous you got to enjoy them!

    Can I ask how you choose your papyas? I purchased one a few weeks ago and even though I cut it up when it “looked” right (had to google it), it doesn’t have much of a taste.

    I wish I had some great recipe I was making this week. =( There are a lot I’d like to make but trying to clean out the fridge and freezer first.

    Way to go on the 5K, Danica!

    I’m loving fresh fruit right now, too! I bought a huge container of cut-up fruit at the supermarket (lazy, I know and my wallet was screaming!) over the weekend and it’s already gone. Even the husband and daughters will dig in when it’s ready for the taking!

    Dinner looks so yummy!

    I have to admit, I snorted a little bit when I read about the boiled peanuts. As someone who has grown up in the south, the fact that you’re intrigued by these makes me smile. They’re delicious! They’re soft and salty and we eat them all the time around here. (I’m in middle Georgia.) I’ll try to remember to email you a crockpot boiled peanut recipe AND a boiled peanut hummus recipe just for fun! (The hummus is unusual for the south! BUT it’s delicious!)

    Boiled peanuts are so yummy! But make your own, they are MUCH better. All you need are green peanuts, water and kosher salt. Use 3-4 gallons of water for each pound of peanuts, you want them to have lots of room. There is some debate whether to add the salt when you first start the cooking process or later. I’ve tried both ways and I think they turn out better if you add the salt later. Add peanuts to water and bring to a boil. Reduce heat to a good simmer, cover and boil for around three hours. I always check at the 2-1/2 mark, I like mine to still have a little bit of firmness, but some people like them completely soft. Just personal preference. Then turn heat to low and add about 1/4 cup kosher salt . Let sit on low for an hour and taste to see if they are salty enough for you. You can always add more salt but you can’t take it out!

    The Sopitas look awesome, I wll be making them for brunch Sunday!

    I love boiled peanuts! I didn’t realize they were a “Southern” thing. We get them fresh around here (not canned). They sell them everywhere from gas stations to farmer’s markets & produce stands. Some of them are “Cajun spiced” & some are just regular. They are really good, Danica. Try them if you get a chance. It’s definitely a different texture, but really yummy.

    Sounds like a good time was had by all at the Blogging Conference/Expos! Can’t wait to hear more about your experience. 🙂 Welcome home.

    Hey! the canned boiled p-nuts are good in a pinch. If you are having a craving or don’t want POUNDS of p-nuts hanging around.

    Do them yourself? MUCH better! Someone already posted the directions. I always wait to add my salt once the water starts boiling, although, I do this with everything to keep my pots from being pock-marked!

    DYING to try a coconunt dirty latte. While my Bux barista know how to make that or is it a “danica special”?

    From a former southerner now living in the west . . . I LOVE boiled peanuts and I also love grits – savory or sweet! So glad you experienced the best of the south! Every year the ladies in our church have a potluck breakfast and they always ask for baked cheese grits – although the first year they had no idea what I was talking about!

    I love love love love love your blog – read it daily, Danica! since I started WWP+. My success has been marginal because I haven’t been tracking and really working it – but I’m doing better now.

    Boiled peanuts are very strange, but also surprisingly addicting. You got good comments and instructions already, so I’ll spare you. Actually I never boiled them myself – just tried the canned version. I like roasted unsalted peanuts better. Glad you had fun in Hotlanta – my son just graduated from college 2 weeks ago there – so we spent a week. Great restaurant city.

    About the boiled peanuts? I wouldn’t recommend them but being from the “North”, maybe our tastes run a little different. We thought they were gross. Sorry bout that you Southerners.

    If you had driven farther south or really anywhere outside the city you would have seen signs on the freeway for little stands that sell boiled peanuts. I’ve never seen them canned before though so that is new to me. Frankly, I think they are really nasty. Maybe it’s because I didn’t grow up here so they are foreign to me as well. But, they are soft and usually served warm or hot. Ick.

    That gnocchi dish, on the other hand, looks delicious. I’ve seen that on Eating Well’s site and bookmarked it, but now you’ve definitely inspired me to give it a try. Yum.

    Boiled peanuts are so odd! You’d expect them to be crunchy, but they…aren’t. I’m not a fan of the texture, but they taste great (doesn’t anything salty?).

    I loved reading about the last of your trip in ATL! I felt the same all this week! I just wanted veggies and fruit…real food! Isn’t it funny how when you can eat whatever and give yourself a break your body wants what is good for it. What is a dirty coconut latte, do tell!
