5 Ingredient Fix: 5 Points+ Fiesta Enchilada Skillet

Happy Biggest Loser Day everyone!  I am so PUMP that the show is back on…I seriously go through withdrawals when it’s not Smile

Breakfast was whipped up while I packed my lunch…An eggwich on the go!  2 Slices of Trader Joe’s Fat Free Multi-Grain Bread (3 pp) plus an egg (2 pp) with ICBINB spray.

It’s amazing how quickly work flies by when you have to get caught up after a couple of weeks.  I actually missed my planned morning snack and dug right into lunch.

Weight Watchers Taco Salad

BIG pile of organic mixed greens

Organic Broccoli Slaw

4 oz Extra Lean Taco Meat (4 pp)

1/3 cup Weight Watchers Mexican Shredded Cheese (2 pp)

Salsa

Green Onions

Then…..2 Tbsp’s of the SUPER SECRET SAUCE (2 pp)

Spicy Peanut Vinaigrette

Probably one of the most delicious MEXICAN ASIAN FUSION SALADS I’ve ever made!

I LOVE that dessert can be a HUGE bowl of 0 Points+ fruit ~ banana, orange & blueberries!

Weight Watchers Fruit Salad

Today really was a “Monday” and honestly, not a very good day at all.  Whenever I am having a bad day or feeling a little stressed, I have this notion in my head that DOVE Chocolate makes it all better.

The funny part about this…..as I was telling The Husband about my day, I was having a “moment” and decided to eat CHOCOLATE before dinner Open-mouthed smile (2 PP for 2)

I didn’t get the chance to have my afternoon snack and I was starving.  The Husband wanted to take a trip to Home Depot to get stuff for our living room remodel so I snacked on a Cheese Square (2 pp) and a little French bread (3 pp).

Several of you always ask me if I have any simple, quick, 5 ingredient or less recipes that I make.  Sometimes I do….I was browsing through old recipes this weekend when I remembered one of my FAOVRITE Weight Watcher’s Recipes that I got from one of my meetings.

Quick & Easy Fiesta Enchiladas ~ they take less than 15 minutes to make.

Weight Watchers Vegetarian Enchiladas

Spray a large stock pan with nonstick spray and brown your onion over medium heat for about 3 minutes.

Add in all your layers.  I used Morning Star Veggie Crumbles, but, you could easily use ground beef, turkey or chicken.

Tortillas and HALF of your low-fat sharp cheddar cheese.

Tortillas

16 oz of your favorite enchilada sauce…Mine is Frontera Classic.

Enchilada Sauce

Bring to a boil and simmer over medium low heat for about 5 minutes until everything is heated through.

Boil

Remove from heat and top with remaining cheese.  Cover for 1 minute to melt and serve.

Skillet Enchiladas

I used my 1 cup Weight Watcher Scoop to pile it on my plate ~ Cheesy GOOD! (5 points+ for THIS MUCH!)

VEGETARIAN FIESTA ENCHILADA SKILLET

Quick and Easy Enchiladas

INGREDIENTS

1/2 cup onion, chopped   

12 oz Morningstar Farms® Veggie Frozen Burger Style Recipe Crumbles   

8 corn tortillas, cut into 1 inch squares   

8 oz low-fat cheddar or colby cheese   

16 oz Enchilada Sauce   

INSTRUCTIONS

1.  Spray a nonstick skillet with cooking spray and heat over medium heat. Brown onion for 2-3 minutes. 

2.  Add veggie crumbles, sauce, tortillas and half the cheese. Heat to a boil.  Cover and cook for 5 more minutes.

3.  Remove from heat and top with cheese.

Makes six 1 cup servings, 5 points+ each

THE BEST PART of my day was having enough points+ left to have 1 cup of Chocolate Frozen Yogurt!!! I actually ate it ALL before I thought about taking pictures ~ oops (6 PP_

After dinner and feasting on frozen yogurt, I opened up some fun mail I received yesterday.  The forever amazing in my book, Janetha of Meals and Moves, sent me a surprise in the mail!

Did I mention that I have THIS Crockpot Split Pea Soup cooking right now so I can take it for lunches tomorrow?! I can’t wait for lunch now Smile

What is your favorite type of food to eat?

I am not sure I can pick just one type because I LOVE Chinese, Italian, SUSHI, Mexican….The list goes on.  I have to say though, if I could find a restaurant around here that serves Mexican Asian Fusion food, I’d be all over it!

    I think I’m missing something, what is “HFAL” of your low-fat sharp cheddar cheese?

    I just got a new Canon Rebel T2i for Christmas and I need to learn all about the camera. Let me know if the goodies you received are helpful and hopefully you’ll post some tips on here? Thanks

    Hi Jenna,

    I have found the Frontera Sauce at my local grocery store (Raley’s/Bel Air). I have also seen a line up of them at Whole Foods next to all the salsas.

    Hi Sarah,

    I ALWAYS use the fake meat with something that has flavor like this enchilada casserole or in chili as it just takes on the flavor of the dish. When I tried it plain, I personally did not like it. You could easily use ground beef/turkey/chicken or beans if veggie crumbles is not your thing.

    okay, I made the enchilada skillet. Um…oh my freaking goodness. It was so good!! I used the meatless crumbles and you couldn’t even tell it was not real meat. Plus it was so filling.

    And just to show you how good it was…my boyfriend who isn’t dieting said that he really liked it. In fact, he said he’d like it added to the weekly rotation. 🙂 YAY!! It was so easy and delicious!!

    Next I’m going to try the Sopitas de tortilla (I probably didn’t get that name right but you know what i mean!!)

    That is AWESOME! So glad you both loved it. It is one of my FAVORITE go to meals because it’s so easy. I’ve heard of others getting creative with it adding beans, corn, chicken or beef, but, I haven’t tried that yet.

    I can’t wait to try those Sopitas de Tortilla too!
