Flat out AMAZING!

Today was such a MONDAY in so many ways, but, there is something about having a delicious NEW PIZZA RECIPE that makes everything seem so much better at the end of the day.

I managed to whip up my breakfast through snacks without having to go to the grocery store.  I usually stock up once a week at Trader Joe’s and 1-2 times a week at the Farmer’s Markets.

Last night I whipped up this super easy Western Egg White Scramble for only 2 points!

Western Egg White Scramble

Mushrooms, red bell pepper, green onion

1 oz Smoked Ham

1/3 cup liquid egg whites

Hot Sauce

Sea Salt & Black Pepper to taste

Mid morning I snacked on a remaining TJ’s 0% Greek Yogurt in the container (so I have less dishes to wash :D ), topped with 2 Tbsp Super Nutty Granola and an Agave drizzle (3 pts)

Last night I pulled out of the Fridge/Freezer the things that sounded good without even realizing that I was going for another Mexican Asian Fusion Meal :)

Healthy Asian Slaw ~ For this batch, I used lime juice instead of orange juice and agave instead of honey.

Simple 2 point afternoon snack…..I am sure you all can guess the answer to today’s riddle.

Tonight’s dinner was inspired by Kalyn’s Kitchen and my LOVE of all things miniature.  I have been wanting to try making pizza another way other than on a pita, lavish, tortilla or with dough. 

When Flat Out first came out with their wraps, I’ll be honest, I didn’t like them at all.  I even threw out my bag and what I was eating at the time.  It didn’t matter to me if it was only 1 point if they tasted like cardboard.

But, after seeing Kalyn’s amazing pizza creations and looking over the ingredient list, I decided to give them another try.

One freakin’ AMAZING pizza!

Flat Out Pepperoni & Mushroom Pizza

It was crunchy, yet, not just like a thin crust pizza you’d get at a restaurant.  I actually LOVED the Flat Out Multi-Grain Wrap ~ it reminds me of Trader Joe’s Whole Wheat Flax Crackers that are completely delicious.

My pizza included1 flat out wrap pizza sauce, mushrooms, tomatoes, 1 oz Part Skim Mozzarella, 1 oz Mini Turkey Pepperoni.

Served up with a simple garden salad to get in my 2 cups of veggies.

Dinner in 15 minutes for only 5 points! I was totally thinking as I took my last bite, I NEED to make this again tomorrow ;)

Pizza & Salad

After dinner I whipped up another one of my favorite “CRACKERS” and may or may not have had one!  These are so easy to make and are delicious as a snack, with salad or on top of soup.

Parmesan Almond Crisps

PARMESAN ALMOND CRISPS

INGREDIENTS:

1/2 cup good quality parmesan, shredded or grated

1/4 cup sliced almonds

INSTRUCTIONS:

1.  Pre-heat oven to 400 degrees. Combine the parmesan and almonds.  Line a cookie sheet with parchment paper and make 8 little mounds. 

2.  Bake for 6-7 minutes, until lightly browned.  Removed, let cool for 3 minutes and place in the fridge in an airtight container.

Makes 8 servings, 1 cracker each

I never could get into Flat Outs but then, I never tried making pizza out of them. Maybe they are not the best for wraps but pizza sounds incredible delicious!

Years ago I opened a bag of Flat-outs- sniffed it and said YUCK out loud. Tried a corner of it adn tossed the whole bag in the trash. lol BUT, it was not this flavor that you used- and NOT made into a yummy pizza! :) So , I might need to give Flat-out another try. :) thanks for doing it first. lol

The slaw looks fantastic, Danica! Not a fan of Flat Outs, but do love pizza! We’re having mushroom pizza tonight with italian turkey sausage. For lunches sometimes I’ll make a personal pizza on a large portabella cap.

those parm crisps sure are clever! dude, i saw the mini pepperoni the other day and wanted them so bad! but they didn’t have them in the turkey version. now that i know they exist, i will keep an eye out. i LOVE flat out pizzas!!

Today’s eats look fab! You’re so freakin creative :D Your scramble looks great. Oh, and ever since I said I am too lazy to have veggies at breakfast… I’ve been throwing in a scramble here and there and taking that extra min or two to chop up a veggie ;) Guess what..? Lovin’ it!!

I made flat out pizza’s a while back and really enjoyed it… not sure what has kept me from making this again ?! Loving those turkey pep.’s!! Haven’t seen those yet. Must find!

Still trying to decide what to make for dinner tonight… Maybe I should blog about my Mary’s Pollo Bowl? I am glued to my seat right now though… in my robe… spin makes me SO relaxed and warn out ;P

I finally found the Flat Out bread – I got the Italian Herb and made a pizza for dinner tonight. Delicious and a great treat for a Friday night. :-)

Just wanted to update this, with the new point system, this meal is actually more points them origionally specified. The flatout is 3 points, (we get the light ones and those are still 2 points) the pepperoni is correct and still at 2 points, I didnt see points factored for sauce used (and there are points there), as well as the parm cheese pictured on your salad as well has to be taken into account…

Still a great meal considering the alternatives. We just had a flatout pizza tonight, total points with the light flatout (2 points), 1 serving of turkey pep(2 points), 1/4 cup of part skim moz (2 points), 1/4 cup pizza sauce (1 point) = 7 point pizza (not counting veggies used as they are free.
