I <3 Cupcakes!!!

Happy Friday Eve all!  I really wanted to stay in bed this morning, but, I knew I needed to get my rear in gear and earn the SIFT CUPCAKES that I was going to be eating.  I did a quick 30 minute HIIT on the treadmill and got down to the daily grind.

Breakfast involved a new flavor of Breakfast Pitas ~ Apple Cinnamon!

Barely 3 points a serving, if they had 1 more gram of fiber, they would be 2 points.

They are super cinnamony and chocked full of apples and raisins. Chewy like a bagel, thin like a pita ~ DEEEELICIOUS!  Topped with Laughing Cow (4 pts)

Highlight #1 of my day ~ My co-worker gave me this super cute Hello Kitty Pencil!  I LOVE fun pencils…I can’t help it, it’s the Bean Counter in me :D

Either I couldn’t wait to get to the Cupcake Party of my lunch was THAT good, but, I ate this is like 5.4 seconds!

Do any of you remember Schwan’s?  I remember them for their ICE CREAM as a kid!!!  Who knew that they make other things too.

I was recently contacted by them and asked if I would like to try a few things from their Live Smart Food Line.  I like the concept that they are trying to bring healthier foods that can be made quickly to families that are lower in fat, sodium and have fewer calories.

One of the things I picked to try was the Six Cheese Tortellini.  I was AMAZED it arrived totally frozen in a cool re-usable ice chest ;) !

ONLY FOUR points a serving.

I measured out 100 grams for 4, 1 cup servings on my Eat Right Precision Pro Scale, a little less than half the bag.

While the water boiled, I sautéed a bunch of veggies we had in the fridge.

Cook the bell pepper, sweet onion, olive oil for about 5 minutes, then, add the zucchini & snaps peas.

I like added minced garlic during the last minute because it adds the most flavor and doesn’t get burned.  I also tossed in some crushed red pepper flakes for HEAT, sea salt and black pepper.

Remove from heat and add tomato, parsley & parmesan.

The tortellini cooks super fast – in 4 minutes!  Save and add about 1/2 cup of your pasta water to to the mix to keep the pasta from sticking to the vegetables.

They look like cashew pieces! I <3 BIG BOWLS of Pasta & Veggies!  I really like these 6 Cheese Tortellini ~ they honestly taste like they have full fat cheese, cook a dente and do not taste frozen at all.  I’d definitely get them again :)

Nothing fancy, but, completely delicious (6 points for my ENTIRE BOWL!).

I wish we had breakfast pitas here, damn Canada…

Hi Sydney,

Cupcakes are by far one of my FAVORITE Treats aside from Ice Cream :D

I picked up the Breakfast Pitas at Whole Foods in their bakery bread section. I’ve had the Cranberry Orange and Apple Cinnamon – both are delicious. My co-worker tried their wheat and said it was just ok, not as exciting as the flavored ones.

Love the tortellini dinner! I wonder why it says servings are one cup and that there are 9 servings per bag. Were there really 9 cups in there?

Cupcakes? With glitter?? Sign me up! Sparkles make everything better :)

And that’s a great idea with the tortellini – I love it but don’t find it that filling on its own; those veggies would definitely bulk it up! Yum!

Hi Ashley,

I know exaclty what you mean. I hate it when bags say a bunch of servings but they never have that many. This is often why I weigh them out to make sure I am getting a true serving. I really do believe the Schwan’s bag contains 9 cups as there was over half left. Total score!
