It’s a “Burger” without a Bun

Happy Hump Day everyone!  Thanks for all the great salad recipe ideas on my last post.  Now, I just have to pick one which might actually be harder than thinking of one on my own.  I am pretty excited for the Recipe Renovation that TJ is whipping up on Friday for us so I want my salad to shine Smile

This morning nothing really sounded good for breakfast (except maybe pancakes and bacon)…..when that happens, I usually just stick with the basics.  Yes, I could pick more point+ friendly items, but, sometimes you just have to have TOAST!

Since my co-worker and I will not be able to indulge in our FAVORITE tacos in a couple of weeks when we move, we decided we NEEDED to have them one last time.

I started with my 12 Chips & Salsa (portioned out and broken into pieces with like the entire container of salsa) LOL (4 points+)

Then, 2 of the BEST Spicy Shredded Chicken Tacos in the world from TR2! (10 points+)

When I got home, I had an AWESOME package waiting for me from the folks at Weight Watchers.

Weight Watchers recently designed an entire line of Fresh Meals located in the Fridge Section at most grocery stores.  They asked if I wanted to give the meals a try ~ after checking out the nutritionals and ingredients, I agreed.  I LOVE the idea that they are fresh meals with REAL ingredients.  Reviews coming soon!

Dinner tonight was PHENOMENAL!!!! I can honestly say this is one of the BEST recipes I have made in a really long time. 

There is sort of a story behind it though.  I have had it on our menu for a few weeks as some of you may have noticed, however, The Husband has “vetoed” it several times.  He has never been a fan of meatloaf ~ ever.

So, one of my AWESOME readers who made the recipe told me to tell him what she told her husband ~ They are just funny shaped Burgers.

Tonight, I asked the Husband if he wanted to have BURGERS WITHOUT A BUN and he was like YES! Open-mouthed smile

This recipe is super simple to make and could definitely be made up in advanced so all you have to do is come home and cook it.

Saute 1 onion and 2 garlic cloves in nonstick spray until softened, about 3 minutes.

Then, mixed everything up in a big bowl….I think the TWO KEY ingredients in this recipe surprisingly are the CHEESE (I used lowfat Sharp Cheddar) and the horseradish.

Form into mini meatloaves. You will want to use parchment paper or a sil-pat because when the cheese ooozes all over, they will stick if you don’t.

Top with Annie’s Organic Ketchup (the best ketchup around!) & bake for 25 minutes at 425 or until done.

O-M-G!  7 Points+ and worth every single bite.  I LOVED the little "fried cheese disks” that surrounded each burger without a bun!  He even said they look like mini meatloaves and I said ya, that’s the funny “burger” shape Winking smile  Click HERE for the recipe.

I had planned a fancy side salad and my Mock Mashed Potatoes but honestly all I really wanted was my Spicy Asian Peanut Slaw (2 points+)

After dinner I whipped up a batch of Meyer Lemon Seed Chia muffins for my Hair Dresser.  She is trading me some of those Homemade Chicken Potstickers for them tomorrow and I cannot wait!!! Although, I wish I made a double batch because these smelled AMAZING!

Have you ever “tricked” anyone into eating something because you knew they would LOVE it if they would just try it?

Believe it or not, my friends did that to me with sushi.  I used to HATE sushi and would often try it because they would rave about it all the time…yet NEVER liked it.  Until, one time I tried a roll that had eel on top of it, they told me it was teriyaki chicken with fried shrimp in the middle.  The crazy part, I LOVED it and well, as you all know, I LOVE sushi now, including the RAW and the REAL deal.

As for The Husband, I just don’t tell him what’s in stuff and he LOVES it ~ my mock mashed potatoes and these meatloaves are the perfect example! Winking smile

Wow, I’ve never seen the fresh Weight Watchers foods. I wish we had those down here in SoCal! I’m definitely going to have to try the mini meatloaf recipe.

I tricked my daughter into eating *gasp* cauliflower. She is a big “I don’t like vegetables” kind of person so I mashed in about 1/2 cooked cauliflower with 1/2 mashed potatoes and she had No Idea, LOL!

I’ll be on the lookout for the WW foods. Haven’t seen them around St. Louis yet.

Love these!

I trick DBF all the time. He’s such a picky eater when he knows what he’s eating. An example, he says he hates turnips with a passion but he has yet to realize that when I make loaded potato soup there are no potatos just turnips. Less starch and calories for me and no fuss from him.

I don’t really “trick” anyone into eating something but I make all these yummy WW recipes and they have no idea how healthy they are for you. I made the white chocolate almond cookies last night and the kids and my husband ate them all up. They had no idea how healthy they are for you. There are a few WW recipes that I use all the time and no one knows the difference.

I didn’t like sushi either until I really tried it and its one of my favorite foods. I could eat it all the time!!!

I will definitely be trying the mini meatloaves! And I can’t wait to check out the new WW offerings. I love WW entrees, but like you would like for the ingredient list to be simpler and more natural.

I made those mini meatloaves for my family and we loved them!

I got a shipment those WW entrees and side dishes as well and so far I have liked what I have tried. Of course they are not as good as home made but I would buy them if they were available in CA.

My dad doesn’t think he likes ground turkey but he loves my chili that is made with it! We just don’t tell him!

I used to do it all the time to B! I’ll would give him some of whatever I’d made and he’d ask what it is …and he’d get a ‘funny shaped burger’ kind of response and eat it. Then I tell him MWAHAHAHHAHA! lol Now, I just tell him bc he knows I wouldn’t feed him anything ‘gross’. He used to ‘hate’ broc, brussels sprouts, tofu (that one took a while lol), cauliflower… but he still says he doesn’t like quinoa even though he loved it in the casserole I made a few weeks back. It’s all about the flavor, right? If I put a huge pile of steamed brussels sprouts infront of him he still won’t eat it, but roast them in the oven or thinly slice them and then brown in a skillet and he’ll go to town.

One of my favorite things to ‘do’ to friends is make something they ‘hate’ and get them to like it :D It works pretty much every time, unless they’re REALLY picky. Got my pickiest friend to eat sour cream in a twice baked potato he was raving about when I broke the news… lol. He was like. I knew it tasted ‘weird’… I told him he was a liar. haha!

I used to think I didn’t like sushi either… B took me to his fav sushi spot and insisted that I try a piece of his raw roll and I was hooked. It wasn’t smooshy, slimey or gross ;) Imagine that?! Now I loooove it. Esp ahi and salmon rolls.

Wow. Dinner DOES look good. I wish we had the weight watchers fresh foods up here in Canada, I’d love to give them a go. Nothing beats home made, but sometimes, getting something to “grab and go” is JUST what is needed. Have a great day Danica!!!

My man is a little more open minded these days than when I first started throwing words like nutritional yeast, vegan cheese (only because I’m lactose intolerant!), and kale chips around… he’ll try most things I make these days! :) I am drooling over that crunchy cheesy badassness around each burger without a bun! ;)
