Meet My Little Pumpkins

Happy Friday Eve all!  I cannot believe the weekend is almost here and I have almost survived my first week! Ok, you all seriously crack me up….no, really, you do!  I LOVED reading all your creative names on what to call the Sausage Potato Skillet, but, I am really torn on which name I liked BEST for this week’s Wordless Wednesday ~ Toe Wedgie and FHONG (Foot Thong) are up there on my LMAO list

This morning I was up at 5 AM and out the door by 6 so I could get to work before my day of meetings started.

Cooking when you are sleepy can sometimes result in brown eggs…..kinda like green eggs only not as pretty….I forgot my egg was on the stove while I made up The Husband’s Lunch.

But, my Sausage Egg-Wich on a Double Fiber Thomas WW English Muffin still turned out to be pretty tasty. (6 points+)

Today was sort of a long day, but, sort of not.  I had meetings all morning long with just enough time to run down to the salad bar to make up lunch.

BEST WORK SALAD BAR EVER!!!  I totally loaded up on veggie goodness today…..

Grilled Veggies ~ the smoky flavor makes it so you don’t need dressing.

I am IN LOVE with this Egg Salad….I am pretty sure they make it better than I could….maybe it’s that whole food taste better when someone else makes it for you. ( 4 points+)

I did add a token piece of Tofu because Tracey is ALWAYS telling me I need to give it another try.  For the record….I still think tofu is nasty….it goes in the same bucket as okra for me Open-mouthed smile

Did I mention they had the MOST delicious fresh roasted beets too???

I am pretty sure I threw the kitchen sink in my salad today ~ still, total DEAL at $7!

  • Romaine, mixed greens & cabbage
  • cucumber slices, tomatoes, freshly roasted beets!
  • Grilled Veggies!
  • Egg Salad (4 points+)
  • 1 Tbsp each ~ garbanzo/kidney beans, peas, corn, dried cranberries & croutons(4 points+)

I added a freshly baked roll today too because I knew I wouldn’t get the chance to have an afternoon snack (3 points+)

3 hour meeting fuel ~ Iced Coffee w/1 pump vanilla & a splash of milk (1 points+)

On my way home I stopped by Trader Joe’s because I actually WON the raffle they have for bringing your own bags!

I was so excited when I saw they had their mini pumpkins in!!!

Ohhh and yes, I totally named our pumpkins because I can Open-mouthed smile

My brain was 110% broken for what to have for dinner….I blame it on the fact that I am trying to figure out my new schedule and how to balance it all.  That is one of my goals for this weekend!

So, what’s a girl to do when she can’t think of a single thing to make?!

Ummmm, buy everything they are sampling at Trader Joe’s Open-mouthed smile

I’ve made these Pasta Purses once before and I think I liked them with pesto, garlic kale & mushrooms better..

Since the goal was a 15 minute meal….we just added pasta sauce.

1/2 the package is 10 points+

1/3 is 7 points+

I also picked up the frozen garlic veggies too.

I went for 1/3 of the package so The Husband could have more and I could have some garlic bread too.  I really LOVE the texture of these pasta purses, but, you don’t taste the BACON….they taste mainly like mini meat filled ravioli’s.

I also bought the Trader Joe’s Garlic bread that we both decided we didn’t really like (I know, gasp….I am pretty sure I’ve loved every bread I’ve ever come across).  It just had too much buttery cheesy goo on top (sorry there isn’t a better way to put it). 4 points+

Speaking of PUMPKINS….. I NEED to brainstorm IDEAS! I have heard we have a pretty intense Office/Cubicle decorating contest & costume dress up for Halloween.  I know last year was probably the BEST cubicle decoration I’ve ever done……but, I NEED new ideas….

What are you some of your BEST Halloween decorating & costume ideas??

    I love to make my own McMuffin sandwiches at home! I make them often for the family to take as road food on the go in the morning.

    I love that your office does decorating contests too! Myself and Anna won last year for our graveyard themed decorations.

    We had graveyard brownies, worms in dirt, and all kinds of goodies. If you want pictures send me an e-mail and I can send them over. 🙂

    I’m getting sooo excited because we are moving to our new office building next week-end, and have a great chef as a caterer! Hope we have a good salad like you do!! I need to get some small pumpkins…they are so darn cute! Congrats on a good first week at your new job!!
