Simply Delicious!

Happy Monday all!  I think I reminded myself today that sometimes the MOST SIMPLE EATS have the MOST FLAVOR and are truly delicious.  I totally want to repeat my day all over again tomorrow it was THAT good šŸ˜€

However, BEFORE I get started, I have to tell you that The Husband corrected me on yesterday’s post!  He said he coaxed me into walking to Starbuck’s, not the other way around….sooo, um, it was his decision, k? šŸ˜‰

I decided to get my Latte Fix this morning by creating my very own Iced Decaf Cafe Misto in my RE-USABLE Starbuck’s cup (Thanks for the reminder to pull it out Pam :))

1 c fat free milk

1 c cold decaf coffee

Ice

Drizzle of Caramel

Delicious and I saved a point ~ 2 points for my big cup – Woohoo!

Breakfast was simple, clean eats!  A perfectly hard boiled egg (2 pts)

Instant Grits because you don’t have to be Southern to eat them! šŸ˜€ (2 pts)

Plus a cup of organic berries ~ this is one food you DEFINITELY want to get organic or grown without pesticides as they absorb everything put on them (1 pt)

Mid morning snackage ~ Cabot and a banana (3 pts)

My lunch today was AMAZING!!!! It started off with an AWESOME pedicure and girl chat with my friend.  I think my feet actually thanked me šŸ˜‰

Then, I RESISITED the urge to get Panda Express and whipped up my own healthy lunch with an Asian Inspired Flair.

Crunchy Broccoli Slaw ~ Trader Joe’s Organic Broccoli Slaw topped with Trader Joe’s Spicy LF Peanut Dressing (1 pt)

Trader Joe’s Spicy Soba Noodles with steamed broccoli slaw and Sriracha (5 pts) ~ some like it H-O-T!

I LOVED adding 1 1/2 cups of the steamed slaw because it made a HUGE BOWL of pasta….nom, nom, nom….I was sad when it was all gone.

I wasn’t really hungry this afternoon, but, I wanted something sweet.  I busted out another Golden Moon Tea Sample ~ Sugar Caramel Oolong.

It smells SO GOOD – like caramel flavored cotton candy.

I honestly think this is MY FAVORITE Golden Moon Tea so far ~ it tastes just like caramel or maybe creme brulee…it is a lighter tea tea which was perfect because I am not a fan of dark, strong teas.

I spent a little quality time with Barefoot Contessa drooling over what she was making today before I headed into the kitchen to whip up dinner.

BEST PART OF TONIGHT’S DINNER ~ I picked all the herbs from our GARDEN!!! šŸ˜€ šŸ˜€

Basil, Rosemary & Lemon Thyme (you can totally smell the lemon in it too)

I have been totally wanting to make the sandwiches on the cover of this month’s Clean Eating Magazine ever since it arrived.

ROASTED CHICKEN & PORTABELLO FOCACCIA

I pretty much followed the recipe, but, I made a few additions and I doubled the filling.

1.  Preheat your oven to 400 and line your cookie sheet with foil & non stick spray.

2.  Meanwhile, slice up 1 lb organic chicken breast into 1/2 inch strips and 2 portabello mushrooms into 1/4 inch strips.

3.  Add 1 Tbsp Fresh Chopped Rosemary, 2 tsp fresh thyme, a sprinkle of crushed red pepper flakes, sea salt and freshly ground black pepper.

4.  Toss your chicken/mushroom mix with 1 Tbsp Balsamic Vinegar and 2 tsp Olive Oil.  Place on your cookie sheet(s) and roast for 15 minutes, turning half way through.

5.  While you chicken/mushrooms cook, chop up your sandwich toppers.  Basil, tomato, scallions and fresh mozzarella.

6.  Layer it up!  I used Trader Joe’s Wheat Focaccia and cut it into 8 squares.  I took one square and cut it in half.  Top with a slice of mozzarella (1/2 oz), a little chicken (2 oz) and a few mushrooms.

7.  Plus a slice of tomato and few scallions.

8,  Fresh basil!

9. Put your focaccia hat on, SMOOSH and enjoy! (5 pts)

The Husband put in his request for my Healthier Potato Salad.  I had 1/2 cup (2 pts)

MMMMM…These were so simple to make and totally LOADED with flavor, You really could taste all the layers of flavor, including each herb.  I’d definitely make them again.

I found a new way to satisfy my CHOCOLATE craving tonight with a HEALTHY BANANA CHOCOLATE ICE CREAM SUNDAE!!!

I seriously LOVE my MINI CHOPPER because it makes my thick, creamy ICE CREAM like no blender can! šŸ˜€

It’s organic, it has REAL ingredients, it has GREAT STATS!

2 POINTS for my 1 cup bowl!!!  This seriously tastes just like a creamy, rich, banana sundae with chocolate syrup.

The Husband stole half of it but told me he didn’t like it because he didn’t want me to stop buying ice cream for him and giving him this instead LMAO….he’s funny!

LOVE!!! Such a GOOD, HEALTHY food day!  It’s the little things šŸ˜€

    You have a reusable Starbucks cup that you never use?? I looked all over for one, but they discontinued them. When I finally found them I got SO excited. But then it broke šŸ™ I’m jealous of yours!! haha

    Love the starbucks cup- and I just saw in the last bed bath & beyond ad that they sell similar ones (not as cool though! lol) šŸ™‚

    Those sandwiched look delicious! Minus the rosemary- it’s one of the herbs that I like to sniff not eat. šŸ™‚

    I need a BIG freezer…I love throwing bananas in there to make stuff like this! YUM! I thought that chocolate flavored sauce from TJ”s was bitter. Maybe got a bad batch?

    Bahaha! Love your husbands response to liking the “icecream”. That is definitely something mine would say. I still have not made banana soft serve. I need to though!

    Hi Tay,

    No, no…I DO use my re-usable mugs both HOT and COLD, but, for some reason I only use them when I make coffees at home versus going to Starbuck’s. So the reminder was to take them with me there too!

    Bummer about yours breaking, but, I saw someone else comment on where you can buy one that looks just like it.

    That is good to know – now I can tell people to check out Bed, Bath and Beyond!

    That sandwich was SO GOOD, I was shocked at how much flavor it has. I am making it into a salad today – YUM….it took awhile for Rosemary to grow on me, but, now I don’t mind it in small quantities.

    You can totally freeze one banana in a small container at a time šŸ™‚

    The Midnight Moo isn’t super bitter, but, I’d say it’s more like Dark Chocolate than Milk Chocolate.

    I always have so much to write after reading your posts..haha!
    I really need to get some broccoli slaw because I love the crunch it adds to everything! your portobello sandwich looks so delicious. I had a sammie last night, but it was just cheese and tomato. I love portobello sandwiches. I love that you picked the ingredients from your garden too! Fresh herbs are awesome. And I used to have that exact same mini chopper! They are hard to find that small, and I gave mine away after I got a mini food processor, but I do miss it when I want to chop small amounts. I love banana fro yo!

    I wish I liked mushroom! Love the flavor, not the texture. But you had me at Cabot cheese – that’s one of my favorite brands of cheese! šŸ˜€

    OH MY GOSH! Your dinner last night is like my dream dinner! Those herbs and mushrooms…swooon! Your garden is producing some mighty fine looking herbs, if I do say so myself (jealous!)!!!
